Prepare zucchini for a tasty journey by cutting it into thin, delicate slices. Gently coat these slices in olive oil, ensuring they are glistening with goodness.

Season to taste, allowing it to blend with the natural flavors of the zucchini. Then, marvel as they dance in the air fryer, eventually crisping up to perfection. Here is a simple recipe for you to try:

  • Olive oil spray
  • 2 medium zucchini about 1 lb. total weight
  • 1 ¼ teaspoon Diamond Crystal kosher salt divided
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • ¼ cup Parmesan dry-grated (not shredded)

Preheat the oven to 425 degrees Fahrenheit. Line a rimmed baking sheet with parchment paper and spray it with olive oil.

Cut the zucchini into 18-inch rounds. 1 teaspoon kosher salt should be sprinkled over the slices. Place the salted zucchini in a washbasin colander and set aside for 30 minutes at room temperature.

This should remove part of the water. After 30 minutes, use paper towels to rinse and blot dry the zucchini slices.

Arrange the zucchini slices on the prepared baking sheet in a single layer. Olive oil should be sprayed over them. 15 minutes in the oven.

Take the baking sheet out of the oven. Sprinkle the remaining 14 teaspoons of kosher salt, black pepper, garlic powder, and grated Parmesan over the zucchini pieces. It is not necessary to flip the courgette.

Return the pan to the oven and bake for another 15-20 minutes, or until the zucchini slices are golden and crisp.

Zucchini Noodles (Zoodles)

These zucchini noodles transform into a delicious, healthier option for classic spaghetti in just a few minutes in the air fryer. Here’s a tasty recipe for you:

  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • 2 medium zucchini
  • 2 tbsp parmesan, grated
  • salt and pepper, to taste

Zucchini and Chickpea Balls

Combine zucchini, chickpeas, and a fragrant spice blend. Form this tasty mixture into small, spherical balls. Watch as they sizzle in the air fryer and turn into golden, crispy nibbles.

These protein-rich orbs make a tempting appetizer or snack, with a delicious crunch that will keep you coming back for more. Here’s a simple recipe to try for yourself:

  • 1 400g can chickpeas drained and mashed with a fork (NB do not blend, it will become too sloppy)
  • 200 g grated courgettes or baby marrows (1 large courgette) as much of the moisture squeezed out as possible (use your hands or a clean tea towel)
  • 100 g grated carrots (1 medium carrot)
  • 1 egg
  • 1/3 cup oats
  • 1/2 tsp salt
  • a few grinds of black pepper
  • 1 tsp dried oregano or 1 Tbsp fresh oregano, finely chopped
  • 1 tsp dried rosemary or 1 Tbsp fresh rosemary, very finely chopped
  • 2 cloves garlic crushed
  • juice of 1/2 lemon or lime
  • OPTIONAL 1 feta cheese round, crumbled

Preheat the oven to 200 degrees Celsius (180 degrees Celsius with the fan on).

In a large mixing basin, combine all of the ingredients. Begin with the chickpeas, mashing them with a fork in a mixing dish before adding the remaining ingredients. If you don’t squeeze the water out of the courgettes, your finished product will be flimsy.

Form the batter into balls using your hands or a tiny ice cream scoop, place on a greased baking sheet, and bake for 30 minutes (until golden brown).

Serve! They’re great in a dish with grilled vegetables, fresh herbs or leaves, whole-grain bread, and tzatziki or simple Greek yogurt.
